Easy peasy Smokey butter beans

Now it’s getting a bit colder this protein packed bean dish will warm you up. Have on top of a jacket potato, jacket sweet potato or toast. Could add a load of greens or spinach if you have too and cheese 

Ingredients 

  • Tin butter beans 

  • Tin chopped tomatoes 

  • 1 red pepper chopped into small cubes 

  • 1 tea spoon each Garlic powder/onion powder (could be fresh if you have it) 

  • 2 tea spoon smoked paprika 

  • Chopped Curly parsley including stalk! 

  • Table spoon whatever vinegar you have, red wine best (or old red wine!) 

    Step 1

    Heat the oil in a small pan, add the onion powder, garlic powder and chopped pepper, and fry gently until soft, about 8 mins. 

    Step 2 

    Add the tomatoes, smoked paprika, vinegar, beans, sugar and some seasoning. Bring to a simmer and cook for 20 mins or until slightly reduced and thickened.

    Step 3 

    Pour on top of your jacket potato or toast, and sprinkle with chopped parsley
