Sunny Day Potato and Cheese Frittata
Simple filling meal for a sunny day!
Ingredients
400g new potatoes (boil first & cool down before starting to cook the meal)
4 eggs
4 spring onions
25g grated cheese (measured in bag)
Optional - handful of peas, any other cooked veg, spinach or green beans
Serves 4 people
Method
Step 1
Boil new potatoes until cooked. Cool down then slice thickly.
Step 2
Chop spring onion, using all of it- don’t throw the green part away! At this point get handful peas out of freezer or tin if you have them (any other cooked veg will work - spinach, green beans etc)
Step 3
To start the frittata- in a frying pan heat a couple of tablespoons of whatever oil you have of whatever oil you have and then layer the potatoes and onions and lightly fry. Whilst doing this crack eggs and whisk in a bowl with a bit of salt and pepper- at this stage add more eggs and a bit of milk if you have
Step 4
Pour egg mix over slightly fried potatoes and cook on medium heat on hob for 5 mins, moving a bit with a spatula to stop it catching. Sprinkle on the grated cheese and get under a medium heat grill until it bubbles and is firm.
Step 5
If you are sure it hasn’t stuck put a plate on top and tip upside down, if you’re not so sure, put on the table in the pan on a tea towel and spoon out to enjoy!
Will be lovely with salad if you have it, with ketchup & mayo, bread, even in a sarnie. Perfect for cold lunches too.
