Sweet Potato, Carrot, Coconut and Chilli Soup

It’s soup season, let’s get cosy 

Ingredients 

  • 2 sweet potatoes cubed no need to peel 

  • 2 carrots chopped 

  • 1 medium onion chopped 

  • 2 garlic cloves chopped 

  • 2 stock cubes dissolved in 1000ml hot water 

  • 1 tin coconut milk 

  • 1 tea spoon chilli flakes 

  • Handful coriander, stalks finely chopped, leaves roughly chopped 

  • Oil, salt, pepper 

Need a stick blender- if no stick blender, that’s ok just chop everything into smaller bits and keep it chunky 

Method

  • Step 1

    Fry on medium heat onions, garlic, carrots until soft 

  • Step 2

    Add sweet potato and stock. Let it bubble away on medium heat for about 20 mins 

  • Step 3

    Turn off heat, add the chilli, salt and pepper, coconut milk and coriander stalks, give a good stir then blend carefully as the veg will be very hot indeed!

  • Step 4

    Serve straight into bowls, garnish with coriander leaves and a big squeeze of lemon or lime if you have it
