Creamy Courgette, Lemon and Basil Linguine

 Fresh, light & tasty (so quick!!) for a summers day

Ingredients

2 courgettes sliced into thin rounds

2 garlic cloves sliced thinly

400 g linguine

1 lemon (juice & zest)

Tub Cream cheese (can use mascarpone or ricotta)

Handful torn basil

Oil

Salt & pepper

Toasted seeds or pine nuts would be a nice sprinkle!

Chilli flakes if you fancy

Serves 4 people

Method

    • Step 1

      Sautee courgettes in a good glug of oil on medium heat in a big frying pan or wok with sliced garlic until soft

    • Step 2

      Boil linguine until it has a little bite, keep a bit of pasta water

    • Step 3

      Stir linguine into courgettes on low heat. Add the cream cheese & keep stirring. Add a bit of pasta water to loosen. Add lemon zest & stir

    • Step 4

      Take off the heat, add lemon juice, salt, pepper & torn basil, a light toss & serve

      Have with chicken or fish if you have it, on its own or with a salad : )
