Courgette, Feta and Bean Salad

So fresh & delicious & energising in hot weather!

Ingredients

400g tin beans (any type of beans - mixed, butter beans/chickpeas will be great!) drained and rinsed

  • 1 small garlic clove, finely grated

  • 1 unwaxed lemon, zest and juice

  • 10g fresh parsley, roughly chopped

  • 10g fresh mint, roughly chopped

  • 10g fresh basil, roughly chopped

  • (Finely chopped all the stalks!)

  • 100g/3½oz olives, stoned and roughly chopped & use the oil too!

  • 3 spring onions, trimmed and thinly sliced

  • 100g/3½oz feta, crumbled

  • 1 courgette (approx. 200g/7oz), washed and peeled into ribbons with a vegetable peeler

  • Salt and freshly ground black pepper

  • Olive oil if you have it! Or any oil to dress 1 table spoon

Optional - protein chicken, tofu, nuts, seeds!

Serves 4 people

Method

    • Step 1

      Place the rinsed beans in a large mixing bowl and season with salt and pepper. Stir in the garlic, lemon zest and juice, olive oil and chilli flakes if you like them then leave to marinate for 5 minutes.

    • Step 2

      Stir in the chopped parsley, mint, basil, olives and spring onions. Mix again, then gently stir in the feta

    • Step 3

      Add the courgettes and mix again. 

      Add your extra protein or toasted nuts/seeds whatever you fancy!
