Josh’s Sausage And Lentil Stew
A quick, comforting family dinner ready in about 30 minutes
INGREDIENTS
For the Stew
2 cooked sausages (any!)
1 tin cooked lentils
1 brown onion
1 large carrot
1 celery stick
25g tomato paste
2 cloves garlic
½ tin water or vegetable stock (use the empty lentil tin)
Olive oil
Pinch of salt
Pinch of chilli powder (optional)
For the Broccoli Topping
1 small broccoli head
½ lemon
1 sprig thyme
Butter (optional)
METHOD
Step 1
Prep the veg - peel and chop 1 clove of garlic. Roughly chop the onion, celery and carrot.
Step 2
Sweat the vegetables - in a large pan, sweat the onion, celery and carrot in a little oil with a pinch of salt. Add the chopped garlic and cook for a few minutes more. Set this mix aside in a bowl.
Step 3
Colour the sausages - chop the cooked sausages and add to the same pan to colour, letting a little fat render out.
Step 4
Combine and simmer - add the vegetable mix back into the pan. Stir in the drained and washed lentils and the tomato paste. Use the empty lentil tin to add about ½ tin of water or veg stock. Simmer on low heat for 15 minutes.
Step 5
Prep the broccoli. While the stew simmers, cut the broccoli into florets and cube the stalk.
Step 6
Cook the broccoli - bring about 100ml water to the boil with the ½ lemon, thyme sprig and a garlic clove (don't add too much water it dilutes the seasoning). Add the broccoli and cook for about 6 minutes, or until as soft as you like it. Stir through a little butter if you have it.
Step 7
Serve - spoon the stew into bowls and top with the broccoli. The liquid from the broccoli is delicious too- you could use in your next meal. Enjoy!
Tip - this recipe is easy to double for a bigger family or friends and works well with whatever veg you have in the fridge
