Orzo and Chickpea Soup
A hearty veggie packed bowl of soup made with simple ingredients, can easily throw in whatever other veg you have into the soup
Ingredients
2 Carrots diced
2 Celery Sticks diced
1 Onion diced
3 Garlic Cloves chopped
3 Thyme Sprigs
1 Vegetable Stock Club (make 1 litre)
400g Chopped Tomatoes
400g Chickpeas
Handful of grated Parmesan cheese (or any cheese you have)
150g Orzo
Chopped Parsley

Method
Step 1
Heat the oil in a deep pan over a medium high heat and cook the onion, carrots and celery (and any other veg you want to add) for 15 mins until softened. Stir in chopped garlic cloves and thyme sprigs.
Step 2
Pour in the stock, chopped tomatoes, chickpeas (and the liquid from the can) and simmer for 15 mins. Whilst that’s cooking, pour boiling water over the orzo in a heatproof bowl and set aside for 15 mins.
Step 3
Drain the orzo, add to the pan and cook for 5-8 mins until the orzo is tender. Fish out and discard the thyme stalks then season well. Drizzle over olive oil if you have, grated cheese & chopped parsley to serve : )
