Caprese Salad

A very nice and simple one for hot days or when you can’t be bothered to cook!

It takes less than 10 mins to get ready and on the table will be lovely with roasted meat, burgers or just bread!

For a salad to be a nutritious meal you’re looking to have a complex carb, fibre and good fats as a base (here we have beans and mozzarella) alongside fresh and tasty salad and dressing : )


Ingredients

  • 1/2 cucumber cubed

  • 10 cherry tomatoes halved

  • 20 basil leaves

  • Tin of beans (could be cannelini, chick pea, butter bean) drained

  • Mozzarella ball ripped into pieces

  • Lemon, squeeze the juice

Method

Mix the whole lot into a big bowl with lots of salt and pepper, drizzle with olive oil if you have it plus the lemon juice. Can add any chopped or bagged salad leaves at the end so that they don’t wilt.
