Cheesy Cauliflower and Sprout Bake

Can be served as a main with salad or veg or would be a great side on the big day!

Ingredients 

  • 1 Small Cauliflower 

  • 400 g Brussels Sprouts

  • 30 g Butter

  • 30 g Plain Flour

  • 500 ml Milk 

  • 100 g Grated Cheese (cheddar, or any hard cheese - can also be a combo)

Method

  • Step 1

    Heat oven to 200°C (180°C fan).

    Chop cauliflower into florets & the stalk into cubes, halve sprouts.

    Boil together for 5–7 minutes until just tender. Drain.

  • Step 2

    Melt butter in a pan. Stir in flour and cook for 1 minute.

    Gradually add milk, stirring with whisk until thick. Add a teaspoon of mustard if you have it

    Stir in most of the cheese.

  • Step 3

    Put veg in an oven dish, pour over cheese sauce and mix well.

    Sprinkle remaining cheese on top. (Could add some breadcrumbs/other cheese like feta if you have it.. my mum always used to use broken up crisps for texture!)

  • Step 4

    Bake for 25–30 minutes until bubbling and golden.
